Using the Ayamurasaki variety of sweet potato, which is high in anthocyanins (a type of polyphenol), this is an imo shochu with a splendid aroma. Although low in starch and therefore not very efficient for producing alcohol, we are convinced its characteristics outweigh those weaknesses.
