Peppery with subtle earthiness, KUROKAME uses black koji and is fermented in large ceramic pots to bring out rich, complex aromas and flavors of sweet potato. The round shape of the pot creates natural convection, reducing temperature irregularities, and by burying the kame halfway into the ground, the moromi ferments at a stable, balanced temperature.
